I know I justsaid I'm not going back to manual mixing, but a hand mixer really is an invaluable tool to have in your kitchen. It's much cheaper than a KitchenAid stand mixer and is super versatile to aid in making cookie dough, cake batter, whipped cream, mashed potatoes, or even shredding chicken.
A pan or sheet is arguably the most important baking tool you need — I mean, without it you just have a bowl of batter or dough.
